Blog Stalking 01/19/2011
After months of blog stalking, I decided I am jealous and ready to do it on my own. While I have made several excuses not to do this, I have weighed the positive and the negative and decided that there are way more positives to blogging, such as stress relief, daily tracking etc. So no if's, and's, and big 'ol butts about it, I am done being a stalker and hopefully creating a blog that others can stalk and gain inspiration from. Look forward to more posts on my all-over-the-place-life including sporadic gym visits, random vegetarian bouts, and signing up for 1/2 marathons on whim. See you all soon :) 1 Comment Apple Blueberry Muffins and Wine 09/04/2010
I got the jobbbbbbbbbbbbb! Whew, I am now a full-time 3rd grade teacher and it feels amazing! It's been a stressful and what seemed like a long process but it has all been worth it. Which leads me to why I haven't posted......School starts Wednesday. I can't get into the classroom until Superintendents day on Tuesday.... I am going to be soo busy until then! At least I have this weekend to prepare! Well this weekend I am by myself. Boyfriend is in the Hamptons, and I am home to fend for myself. That would explain the random dinner of muffins and wine. I was feeling something doughy. So i whipped up some apple blueberry muffins made from apple sauce, fresh blueberries, and apple and blueberry granola. There were amazing. Unfortunately I was too wrapped up in my cooking to measure anything ( I usually just throw things in a bowl until the consistency looks right). But I did take lots of pics to document my process!! Enjoy below. Hope everybody enjoys the last few days of summer and this amazing holiday weekend! Overhwhelming and Wonderful 09/01/2010
Today has been an absolutely wonderful, amazing day. I spent the day with my 2 younger cousins going on a paddlewheel boat ride in Lake George. We had a great lunch, went to an arcade, and stopped at a make your own fro-yo place on the way home. It was perfect. I also received a phone call for a job interview at 9 a.m. tomorrow! I am very nervous (hence the lack of posting today) and overwhelmed but I have a wonderful feeling about it! I can not wait to see how it turns out. I currently have a position and this would just be a wonderful upgrade. Well wishes, and tomorrow I will be back on the blogging bandwagon *promise*! Last night I had friends over to have some apps and watch a movie. We had some fresh mozz. sliced beefsteak tomatoes, and apples drizzled with balsamic. We also had fresh strawberry shortcake made with french vanilla poundcake, a strawberry glaze that I had made, and fresh strawberries! It was delish! We watched Kick-Ass and laughed at YouTube Videos until 1 a.m. Needless to say I was concerned about waking up for my run this morning. Well at 6:30 my alarm went off and I reset it for another hour of sleep. At 7:30 I jumped out of my bed, threw my sneakers on, grabbed my ipod and skipped out the door. Once I started running I was more than motivated! It was a beautiful day out and the sun was shining right on my face as I ran. I finished 1.5 miles quickly with only 2 short walk breaks which is a HUGE step for me since I am usually not able to even run for 2 minutes without being winded. But now it is off to work for 8 hours, good thing I packed a lovely lunch. Pictures will follow! Have a great day:) Back on the grind! 08/30/2010
Well this weekend went by entirely too quickly. Saturday morning I was off to a wedding in Upstate New York (almost 10 minutes from the border in Canada). It was a beautiful weekend and spent some much needed time with the boyfriend. This morning was the typical Monday morning routine. I woke up and went running in the clothes I slept in. I was that exhausted! It was a new week of training so my time running was upped and my time spent walking was (significantly) decreased. I do have to say that I felt wonderful after the run and was a hot sweaty mess afterwards. I had just enough time to freshen up and change before hopping in my car to go to work! On my way to work, I stopped to get a black tea from Dunkin Donuts (DD) and also decided to get an egg-white wake up wrap. I chowed down while driving and reached my new favorite market in the area rather quickly. My new favorite shopping market is named "The Fresh Market" and is very new to my area. I went on opening day because I had anticipated it so much and it absolutely met my expectations. They have so many kinds of wonderful fruit and veggies that I can usually not find in my local market. I also can purchase some pretty good pre-made foods from there. That brings me to lunch today! Everything on my plate came straight from The Fresh Market and my mouth was watering as I waited in the checkout line! I am famished from my crazy short run haha but I thought that this would fill me right up and boy did it! It is a ham and swiss sandwich on some sort of multi-grain bread, fresh rasberries, and a piece of Vosges Haut Chocolat Mo's Bacon Bar that is absolutely delish and paired perfectly with my ham sandwich! I never thought bacon and chocolate would go good together but boy do they! Check out that sandwich too! I hate buying pre-made food but I had no other option today as I completly ran out of time. What is your favorite place to go to grab food for lunch when you just don't have the time to make it yourself? What a Sunny Morning :) 08/27/2010
Woke up this morning to nothing but sunshine, birds chirping (not exactly chirping so much as quacking, and a beautiful fall chill morning!!! I woke up around 6:40 and began to get ready for my third run of the week. When I wake up in the morning I get straight to running. There is no eating for me before I run unless I want to be curled up on the side of the road heaving (sorry for the visual). For some reason, eating and even letting it digest for an hour or more does not seem to work for my body. So what I tend to do is grab a bottle of water and be off. I ran with intervals of walking today for exactly 2 miles! I am not going to lie, I was a little impressed. I have not been working out, and I have never really ran an actual mile in my life (not knowlingly). I finished running the two miles in 23 minutes and then did a 5 minute cool down and some foam rolling. I have some back pain that really seems to be relieved when foam rolling. When all was said and done, I decided to sit down and enjoy a nice breakfast. I had made some overnight oats with some Organic Wallaby Fruit on the Bottom Yogurt and mixed in some blueberries and 3 strawberries. It was amazing and fruit on the bottom yogurt was really the way to go! Now I am off to work for a dreaded 10 hours. Working for me really consists of reading magazines, reading blogs, painting my nails, answering an occasional phone call, and talking to my insanely funny co-workers. Have a great day! Another Day Another $46! 08/26/2010
Well, switching my eating habits while good for my body are not good on my wallet. I find myself frequently checking other blogs to see what people are eating and deciding that I would love some banana won-ton cookies, or chocolate amazing grass shake mix. Needless to say, this has me running for The Fresh Market, Green Grocer, or Nature's Place on a daily basis. O well, I suppose if I can spend $60 on a bra from Vickie's I can spend $46 on food that will benefit my body (even though I still think the $60 bra was a more "beneficial" purchase)! Included in my extreme health nut shopping this morning was several larabars in various flavors, a large tub of justin's maple almond butter, and R.W. knudsen spritzer sodas. I am obsessed with maple almond butter and I have come to the conclusion that it is not just for a snack or lunch but also adds to various breakfast meals and dinners when I don't feel like making anything with more than two ingredients. So I have a question, how do you get around this expensive eating( it tastes sooooo good though!)? And what stores have you found to be the best to your wallet? Check!! 08/24/2010
First time blogging.... Check!!! Training underway fo first 5k. Check!!! I began reading blogs, looking at pics of amazing food, and checking out people's lives little by little and thought, I can do this and I might even be good at it so here it goes. I am going to be keeping track of my food consumption ( a transition from completly unhealthy eater to whole foods, organic, and natural products) as well as beginning a couch to 5k training program. Wish me luck, if anything I will be sure to keep you entertained along the way! The picture above is basically the reaction I received when I told my boyfriend I was starting a blog, I am sure there will be lots more of those looks to come :) |
